My Chicken Adobo...

              "Chicken Adobo"

What is Adobo?

Adobo (Filipino: "marinade," "sauce" or "seasoning") is the name of a popular dish and cooking process in Philippine cuisine that involves meat, seafood, or vegetables marinated in a sauce of vinegar and garlic, browned in oil, and simmered in the marinade. It has sometimes been considered as the unofficial national dish of the Philippines.Adobong Manok (chicken) is Filipino "National" Food. Adobo is a famous dish among Filipinos. It is very common to find Adobo dish on Filipino gatherings. Adobo is also a common dish menu on a Filipino restaurants.

Filipino cuisineadobo refers to a common cooking process indigenous to the Philippines. When the Spanish invaded the Philippines in the late 16th century, they encountered a cooking process that involved stewing with vinegar. The Spanish referred to this method as adobo due to its superficial similarity to the Spanish adobo. The Filipino adobo is an entirely separate method of preparing food and is distinct from the Spanish marinade. The Filipino adobo has taken on many variations in terms of cooking style, stewing hours and deviation from meat (it can be used to cook fish or vegetables, for example, rather than chicken or pork); but the three basic ingredients remain: garlic, soy sauce and vinegar.

Ingredients of Chicken Adobo:

1 whole chicken (cut into eighths)
1 whole garlic (chopped)
olive oil or vegetable/corn oil
1 tsp ground black pepper
4 whole black pepper cloves
3 dried bay leaves
1 cup soy sauce
1 cup vinegar
7-up or Sprite (optional)
1 whole lemon (cut into 4) (optional)

How To Cook Chicken Adobo?

  1. Remember to wash your chicken very well. We recommend using the lemon (in ingredients) to scrub all over the chicken parts and rub some salt into it as well.
  2. Heat oil and add all of the garlic, and cook until garlic is lightly browned. Add chicken and sauté until the chicken is beginning to tenderize.
  3. Add ground black pepper, whole black pepper cloves, bay leaves, soy sauce, and vinegar, and let simmer for 25-35 minutes or until chicken is done.
  4. Taste and adjust to suit your taste (should be a bit tangy). When chicken is tender, you may add some 7-Up or Sprite if you prefer a sweeter taste, and let simmer for 5 more minutes.
  5. Serve over rice.
